Wow, that was quite a break. We are finally open and taking on new projects again. All projects from bathroom remodels to custom home builds, give us a call for your project. Classic Remodeling NW Inc. is taking necessary steps to protect ourselves as well as our homeowners during this global pandemic. We have had our guys fill out forms stating the rules and regulations we need to abide by while out working in the field, which constists of staying 6+ feet apart, hand sanitation stations, masks and not coming in to work if they do not feel well. We also take temperatures every morning as well as having our guys checking while out in the field throughout the day. Our homeowners have a waiver to sign stating that they have not been sick, are not around anyone who has had COVID or any symptoms. They also know to stay 6 feet apart and to wear a mask when coming near the project area. Grilled Chicken and Mango Skewers

Grilled Chicken and Mango Skewers

(4 servings)

 

Prep time

(30 Minutes)

 

Ingredients:

  • 3 medium ears sweet corn
  • 1 tablespoon butter
  • 1/3 cup plus 3 teaspoons sliced green onions, divided
  • 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium mango, peeled and cut into 1-inch cubes
  • 1 tablespoon extra virgin olive oil
  • Lime wedges, optional

 

Directions:

  1. Cut corn from cobs. In a large skillet, heat butter over medium-high heat; sauce cut corn until crisp-tender, about 5 minutes. Stir in 1/3 cup green onions. Keep warm.
  2. Toss chicken with salt and pepper. Alternately thread chicken and mango onto 4 metal or soaked wooden skewers. Brush with oil.
  3. Grill, covered, over medium heat or broil 4in. from heat until chicken is no longer pink, 10-12 minutes, turning occasionally. Serve with corn mixture; sprinkle with remaining green onions. If desired, serve with lime wedges.
